  1. Melt 1 tablespoon of butter in a large skillet over medium heat until bubbling, about 1-2 minutes.
  2. Add finely chopped carrots and sauté for about 5 minutes until softened.
  3. Incorporate diced onions and season with salt and pepper; cook for 3-4 minutes until translucent.
  4. Stir in minced garlic and sauté for an additional minute until fragrant.
  5. Push veggies to one side, add vegetable oil, and pour in beaten eggs, scrambling until set.
