Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry sheets on a floured surface to about a quarter-inch thick.
  3. Cut into 4-inch squares and leave space around the edges.
  4. Place a generous dollop of pastry cream in the center of each pastry square.
  5. Sprinkle almond powder over the pastry cream, then place an apricot half on top.
  6. Fold each pastry square into a triangle shape and seal the edges firmly.
  7. Brush the tops of the pastries with the egg wash or plant-based milk.
  8. Bake for about 20 minutes or until puffed and golden brown.
  9. Allow cooling on a wire rack for a few minutes before serving.
