Cooking Instructions
  1. Step 1: Cook Bacon - In a cast-iron skillet over medium heat, place strips of bacon and cook for about 8 minutes, flipping occasionally until they are crispy and golden brown. Transfer to a plate lined with paper towels.
  2. Step 2: Prepare Hash Browns - Using the leftover bacon fat in the skillet, add frozen hash browns and cook over medium heat for 5-7 minutes, or until they turn golden brown and crispy.
  3. Step 3: Scramble Eggs - Whisk eggs and half-and-half together, melt butter in the skillet, then pour in the egg mixture. Stir for 3-4 minutes until soft curds form, then season with paprika, salt, and pepper.
  4. Step 4: Assemble Burritos - Lay tortillas flat, then layer with hash browns, scrambled eggs, cheddar and mozzarella cheese, and bacon.
  5. Step 5: Wrap Burritos - Fold in the sides of each tortilla towards the center, then roll tightly from the bottom to secure the filling.
  6. Step 6: Grill Burritos - Brush burritos with bacon fat and grill in the skillet over medium heat for about 2 minutes on each side until golden and crispy.
