Preparation Steps
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Slice each zucchini in half lengthwise and scoop out the flesh, leaving a ¼-inch border.
- Chop the reserved zucchini flesh and set aside.
- In a large skillet, heat olive oil over medium heat, then sauté onion and garlic for about 2-3 minutes.
- Add ground beef to the skillet, cooking for about 5-7 minutes until browned.
- Stir in chopped zucchini flesh, breadcrumbs, Parmesan cheese, tomato sauce, oregano, salt, and pepper.
- Spoon the filling into the hollowed zucchini halves and arrange on the baking sheet.
- Top each zucchini with shredded mozzarella cheese.
- Bake in the oven for 20-25 minutes until the zucchinis are tender and cheese is golden brown.
- Remove from oven, garnish with parsley, and serve.
