  • 3 tbsp Kewpie Mayo can substitute regular mayo
  • 1 tbsp Sriracha adjust based on spice preference
  • 1 tbsp Sesame Oil or neutral oil if allergic
  • 1 cup Sushi Rice short grain rice preferred
  • 2 tbsp Rice Vinegar ensure sugar is dissolved
  • 1 tbsp Sugar balances rice vinegar
For the Wrapping & Toppings
  • 4 sheets Nori Sheets or rice paper if unavailable
  • 1 tbsp Furikake optional garnish
  • 2 stalks Green Onion can substitute with chives
  • 1 tbsp Cooking Spray prevents sticking

Method
 

Step‑by‑Step Instructions
  1. Cook sushi rice according to package instructions, typically around 20 minutes. Mix in rice vinegar and sugar, let cool slightly.
  2. Chop salmon into small cubes and mix with soy sauce, Kewpie mayo, sriracha, and sesame oil in a bowl.
  3. Cut nori sheets into squares/circles slightly larger than muffin cups.
  4. Preheat oven to 400°F (200°C) and grease muffin tin. Press sushi rice into nori, then fill with salmon mixture.
  5. Bake for about 15 minutes until salmon is cooked and tops are golden brown.
  6. Allow to cool, then garnish with spicy mayo, sriracha, furikake, and green onions.
