  • 1 bunch asparagus trimmed and cut into 2-inch pieces
  • 2 tbsp unsalted butter key for garlic sauce
  • 1 tbsp olive oil can substitute with another high smoke-point oil
  • 2 cloves minced garlic add later in cooking
  • 1 tbsp Italian herbs a blend of oregano and basil
  • 1/4 cup Parmesan cheese dairy-free alternative: Pecorino Romano or nutritional yeast
  • 1 tsp lemon zest for brightness in flavor
  • to taste salt & black pepper for seasoning

Method
 

Step-by-Step Instructions
  1. Pat the shrimp dry with paper towels to ensure they sear beautifully.
  2. Trim the tough ends off the asparagus and cut the spears into 2-inch pieces.
  3. In a small mixing bowl, combine Italian herbs with salt and black pepper.
  4. Toss the shrimp in the seasoning mixture and let sit for 5 minutes.
  5. In a large skillet over medium-high heat, melt 2 tbsp butter and add 1 tbsp olive oil.
  6. Carefully lay the seasoned shrimp in a single layer in the hot skillet for 2-3 minutes.
  7. Flip the shrimp and add the asparagus pieces around them. Cook for another 2-3 minutes.
  8. Push the mixture to one side and add minced garlic to the empty side, sauté for 30 seconds.
  9. Gently toss everything together and sprinkle with Parmesan cheese and lemon zest.
  10. Plate immediately, drizzling pan juices over the top.
