Step-by-Step Instructions

  3. Add the eggs one at a time, mixing until smooth after each addition.
  4. Stir in fresh lime juice, lime zest, vanilla extract, and finely chopped mint leaves.
  5. In a separate bowl, whisk together flour, baking powder, and salt. Gradually mix into wet ingredients.
  6. Chill the dough in the refrigerator for 20–30 minutes.
  7. Line a baking sheet with parchment paper.
  8. Scoop tablespoon-sized balls of dough onto the prepared baking sheet.
  9. Bake for 10–12 minutes until edges are lightly golden and center is soft.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
