  • 1 tablespoon Milk for brushing the pastry

  • 100 grams Blue Cheese can be replaced with feta cheese
  • 50 grams Parmesan Cheese using pecorino can add different flavor
  • 80 grams Walnuts can substitute with pecans or almonds
  • 2 tablespoons Fresh Thyme or adjust with dried thyme
For Sweetness
  • 2 tablespoons Honey agave syrup is a vegan substitute
For Seasoning
  • 1 teaspoon Sea Salt
  • 1 teaspoon Cracked Pepper

Method
 

Step‑by‑Step Instructions
  1. Preheat the oven to 180°C (350°F) or 200°C (390°F) for non-fan ovens.
  2. Roll out the puff pastry sheets on a floured surface and drizzle honey over each sheet.
  3. Sprinkle chopped walnuts, crumbled blue cheese, grated Parmesan, and thyme over the pastry, and season with salt and pepper.
  4. Roll each pastry sheet tightly and cut the log in half lengthways.
  5. Twist each half and form them into a spiral coil shape on baking paper.
  6. Brush the surface of the twisted pastry with milk.
  7. Bake in the preheated oven for 25-30 minutes until golden brown.
  8. Garnish with extra thyme before serving warm.
