- In a mixing bowl, whisk together the miso paste, mirin, sake, brown sugar, and soy sauce until smooth.
- Pat the black cod fillets dry and place them in a shallow dish. Pour the marinade over and refrigerate for 12 to 24 hours.
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Remove fish from marinade and shake off excess. Leave a thin layer of glaze on the fillets.
- Place marinated fillets on the baking sheet and bake for 10 to 12 minutes.
- Switch on the broiler and broil the fish for 1 to 2 minutes until the glaze is bubbly.
- Remove from oven and let rest for 2 minutes before serving.
