Ingredients
  

For the Cajun Chicken
  • 4 pieces chicken breasts boneless and skinless
  • 1 tablespoon paprika for seasoning
  • 1 teaspoon garlic powder for seasoning
  • 1/2 teaspoon cayenne pepper for spice
  • 1 tablespoon olive oil for searing
For the Rice and Vegetables
  • 1 cup uncooked rice preferably long grain
  • 2 cups chicken broth for cooking
  • 1 cup onion finely chopped
  • 1 cup bell pepper finely chopped
  • 2 cloves garlic minced

Method
 

Cooking Instructions
  1. Preheat the oven to 375°F (190°C). Line a baking dish with aluminum foil or parchment paper.
  2. Combine paprika, garlic powder, and cayenne pepper in a small bowl. Pat chicken dry and rub the spice mixture all over.
  3. Heat olive oil in a skillet over medium-high heat. Sear chicken on each side for about 4-5 minutes until golden brown.
  4. In the same skillet, add chopped onions, bell peppers, and garlic. Sauté for 3-4 minutes until softened.
  5. Stir in uncooked rice and coat it with the oil and vegetables. Pour in chicken broth and place chicken on top.
  6. Bring to a simmer, cover, and cook on low heat for about 20-25 minutes until rice is tender.
  7. Remove from heat and let sit for 5 minutes. Fluff rice with a fork and serve chicken on top.
