- Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with olive oil.
- Season the chicken breasts with salt, black pepper, garlic powder, and Italian seasoning.
- In a large skillet, heat olive oil over medium heat, add the chicken, and sear for 2-3 minutes on each side until golden.
- Add halved cherry tomatoes and minced garlic around the chicken in the baking dish.
- Top the chicken and tomatoes with shredded mozzarella cheese.
- Bake uncovered for 25-30 minutes until the chicken reaches an internal temperature of 165°F.
- Let it rest for a few minutes and garnish with fresh basil and balsamic glaze before serving.
