  • 3 tablespoons Brown Sugar Can replace with honey or coconut sugar.
Broth Ingredients
  • 4 cloves Garlic Fresh minced is best.
  • 1 inch Ginger Preferably fresh, but ground works.
  • 4 cups Chicken Broth Use vegetable broth for veggie option.
  • 2 tablespoons Rice Vinegar Apple cider vinegar is a good substitute.
  • 1 tablespoon Cornstarch Arrowroot powder is a gluten-free alternative.
Rice Ingredients
  • 2 cups Jasmine Rice Basmati rice is a tasty alternative.
  • 4 cups Water
Garnish
  • 3 stalks Green Onions Sliced, optional but recommended.
  • Salt Adjust to taste.
  • Pepper Adjust to taste.

Method
 

Preparation and Cooking Steps
  1. Cut the chicken thighs into bite-sized pieces and season with salt and pepper.
  2. Whisk together soy sauce, sesame oil, minced garlic, fresh ginger, and brown sugar in a medium bowl. Add the seasoned chicken and marinate for 10 minutes.
  3. Rinse jasmine rice under cold water until clear. Bring 4 cups of water to a boil, add the rice, cover, and simmer for 15 minutes.
  4. Heat oil in a large pot. Add marinated chicken and sauté for 5-7 minutes until caramelized.
  5. Pour in chicken broth and rice vinegar. Bring to a boil, then simmer.
  6. Mix cornstarch with cold water to create a slurry and add gradually while stirring. Simmer for 5 minutes until thickened.
  7. Taste and adjust seasoning with salt and pepper. Add water if too thick.
  8. Ladle chicken and broth over fluffy jasmine rice in bowls.
  9. Garnish with sliced green onions before serving.
