Method
 

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C).
  2. In a medium bowl, combine the pure pumpkin, shredded cheddar cheese, salt, chili powder, and paprika. Mix until fully combined.
  3. Take your slices of bread and butter one side of each slice generously.
  4. Place four slices of bread on a baking sheet, butter side down. Spread half of the pumpkin mixture over each slice.
  5. Add a handful of fresh arugula on top of the pumpkin mixture for a peppery contrast.
  6. Spread the remaining pumpkin mixture over the arugula and top with the remaining four slices of bread, butter side up.
  7. Place the baking sheet in the oven and bake for 6-8 minutes until golden brown. Flip the sandwiches and bake for another 6 minutes.
  8. Remove the sandwiches from the oven, let them cool for a minute, then slice and serve warm.
