Preparation Steps
- Preheat your oven to 350°F (175°C) and position the rack in the center.
- Slice off the tops of the apples and scoop out the cores without piercing the bottom.
- Brush the insides of the apples with lemon juice.
- In a mixing bowl, combine cream cheese, sugar, vanilla, cinnamon, and nutmeg until smooth.
- Fold in graham cracker crumbs and optional nuts until combined.
- Stuff the cheesecake mixture into the hollowed apples.
- Arrange the stuffed apples in a baking dish and drizzle with melted butter.
- Cover with foil and bake for 25–30 minutes until apples are tender.
- Remove foil and bake for an additional 10 minutes until tops are browned.
- Let cool slightly before serving, optionally adding whipped cream.
