- In a medium mixing bowl, combine cream cheese, sugar, vanilla extract, and cinnamon. Beat until smooth and creamy.
- Spoon the cheesecake filling into each prepared apple, pressing down gently.
- In a separate bowl, mix graham cracker crumbs with melted butter and stir until well coated.
- Evenly distribute the graham cracker crumb mixture on top of the cheesecake-filled apples.
- Drizzle lemon juice over the tops of the apples.
- Arrange the filled apples in a baking dish and bake for 25-30 minutes until tender.
