  • 1 pound Chicken Tenderloins cooked and diced
  • 1 can Black Beans drained
  • 1 can Diced Tomatoes drained
  • 1 medium White Onion or yellow onion
  • 1 medium Red Bell Pepper or green bell pepper
  • 1 packet Taco Seasoning adjust spiciness as desired
  • 1 cup Shredded Cheddar Cheese divided
  • 1/2 cup Sour Cream or Greek yogurt
  • 2 tablespoons Lime Juice
  • 1/4 cup Green Onions for garnish
To Serve
  • 1/2 cup Sour Cream
  • 1 medium Avocado sliced
  • to taste Jalapeño Slices
  • 1 bag Tortilla Chips
  • 1 jar Salsa

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Strain and rinse the black beans, then finely dice the white onion and red bell pepper.
  3. In a large mixing bowl, combine the cooked, diced chicken, sour cream, lime juice, and diced tomatoes. Stir in taco seasoning and fold in ½ cup of cheddar cheese.
  4. Spray casserole dish with cooking spray. Layer the black beans, diced peppers, and onions, then spoon the chicken mixture over and top with remaining cheddar cheese.
  5. Bake for 28-30 minutes until cheese is bubbly and golden brown.
  6. Let the casserole rest for 5 minutes, then garnish with sour cream, sliced avocado, and jalapeños.
