- Begin by preheating your oven to 375°F (190°C) and greasing a 9x13-inch baking dish with a light coat of olive oil or cooking spray.
- In a large skillet over medium heat, add a splash of olive oil and then toss in the ground turkey sausage. Cook until browned, about 7-10 minutes. Drain excess fat and set aside.
- In the same skillet, add more olive oil if needed, followed by diced yellow onion and red bell pepper. Sauté for 5-7 minutes until softened, then add minced garlic and cook for another minute before stirring in fresh spinach.
- Mix the cooked turkey sausage back into the skillet with the veggies and set aside to cool slightly.
- In a mixing bowl, crack and whisk together the eggs until frothy. Fold in the cottage cheese and milk until smooth.
- While whisking, add salt, black pepper, garlic powder, and onion powder to the egg mixture. Stir well to season evenly.
- Spread the sausage and vegetable mixture evenly across the prepared baking dish. Pour the egg mixture over the top.
- Sprinkle shredded cheddar cheese over the top of the casserole.
