Method
 

Step-by-Step Instructions
  1. Begin by preheating your oven to 375°F (190°C) and greasing a 9x13-inch baking dish with a light coat of olive oil or cooking spray.
  2. In a large skillet over medium heat, add a splash of olive oil and then toss in the ground turkey sausage. Cook until browned, about 7-10 minutes. Drain excess fat and set aside.
  3. In the same skillet, add more olive oil if needed, followed by diced yellow onion and red bell pepper. Sauté for 5-7 minutes until softened, then add minced garlic and cook for another minute before stirring in fresh spinach.
  4. Mix the cooked turkey sausage back into the skillet with the veggies and set aside to cool slightly.
  5. In a mixing bowl, crack and whisk together the eggs until frothy. Fold in the cottage cheese and milk until smooth.
  6. While whisking, add salt, black pepper, garlic powder, and onion powder to the egg mixture. Stir well to season evenly.
  7. Spread the sausage and vegetable mixture evenly across the prepared baking dish. Pour the egg mixture over the top.
  8. Sprinkle shredded cheddar cheese over the top of the casserole.
  9. Transfer the casserole to the oven and bake for about 40-50 minutes, until the top is golden brown.
  10. Remove from oven and allow to rest for 10-15 minutes before serving. Garnish with freshly chopped parsley or chives.
  11. Slice into squares and serve warm.
