Method
 

Preparation Steps
  1. Preheat the oven to 350°F (175°C) and coat a 9x13 glass baking dish with cooking spray.
  2. Cook the chorizo in a nonstick skillet over medium-high heat for 5-7 minutes until nicely browned, then transfer to paper towels.
  3. Sauté red bell pepper, poblano pepper, and white onion in the same skillet for 3-4 minutes until tender.
  4. Whisk eggs in a large mixing bowl with milk, salt, and black pepper until fluffy. Fold in drained diced green chiles.
  5. Layer frozen diced potatoes in the prepared dish, followed by cooked chorizo, sautéed veggies, and shredded cheese. Pour the egg mixture over the top.
  6. Bake in the preheated oven for 40-45 minutes until golden and eggs are set.
  7. Cool for a few minutes, garnish with chopped cilantro, and serve with avocado and chunky salsa.
