Ingredients
  

For the Shrimp
  • 1 pound large peeled & deveined shrimp fresh or thawed frozen
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice freshly squeezed
  • 1 teaspoon chili powder
  • 1/4 teaspoon cayenne
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
For the Tacos
  • 8 pieces tortillas corn or flour
For the Slaw
  • 4 cups slaw mix green and red cabbage with optional carrots
  • 1/2 cup red onion diced
  • 1 medium jalapeño finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1/2 cup mango or pineapple optional
For the Creamy Sauce
  • 1/2 cup yogurt or sour cream mayonnaise can also work
  • 2 cloves garlic minced

Method
 

Cilantro Lime Sauce
  1. In a food processor or bowl, combine fresh cilantro, minced garlic, yogurt (or sour cream), lime juice, and olive oil. Blend or whisk together until smooth and creamy, about 1-2 minutes.
Slaw Preparation
  1. In a large mixing bowl, combine your slaw mix, diced red onion, finely chopped jalapeño, and a generous portion of the cilantro lime sauce. Toss well and set aside remaining sauce for later use.
Shrimp Preparation
  1. In a separate bowl, drizzle shrimp with olive oil and lime juice, then sprinkle in the spice mixture. Toss until shrimp are well coated.
Grilling Shrimp
  1. Preheat grill to medium-high heat (about 375-400°F). Grill shrimp for 2-3 minutes per side until bright pink and opaque.
Assembling Tacos
  1. Warm tortillas on the grill. Place grilled shrimp in each tortilla, topped with crunchy slaw mix. Drizzle remaining cilantro lime sauce on top and sprinkle with fresh cilantro.
