  1. Reduce Apple Cider: Pour 2 cups of apple cider into a saucepan and simmer over medium heat for about 15 minutes until it reduces to 1 cup.
  2. Prepare Apple Filling: Sauté 2 cups of cubed apples with 2 tablespoons of unsalted butter and ½ cup of light brown sugar for 5-7 minutes until softened.
  3. Make Cupcake Batter: Whisk together cake flour, baking powder, cinnamon, and nutmeg in a bowl. In another bowl, cream butter and brown sugar, then beat in eggs and vanilla before mixing with dry ingredients and reduced cider.
