Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a mini muffin pan by greasing it or lining it with paper liners.
  2. In a large mixing bowl, combine cottage cheese, rolled oats, applesauce, and egg. Add cinnamon, xan optional honey or maple syrup, baking powder, and a pinch of salt. Mix until well combined.
  3. Let the batter rest for about 5 minutes.
  4. Scoop the batter into the prepared muffin pan, filling each cup close to the top.
  5. Bake for 18-20 minutes until the tops are set and lightly golden. A toothpick inserted should come out clean.
  6. Let the muffin pan cool on a wire rack for 5 minutes, then remove the bites to cool completely.
