  2. In a small bowl, dissolve 2 teaspoons of instant coffee granules in 1 teaspoon of vanilla extract.
  3. In a large bowl, cream together ½ cup of melted unsalted butter and 1 cup of brown sugar until smooth and fluffy.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
  6. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop out chilled dough and roll it into 1-inch balls.
