- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a medium mixing bowl, combine the ground chicken or turkey, crushed pineapple, salt, paprika, onion powder, and garlic powder. Mix until well incorporated and form into meatballs.
- For oven-baked meatballs, bake for 25 minutes until browned. For stovetop cooking, cook in a skillet with coconut oil for about 15 minutes.
- In a small saucepan, heat olive oil and sauté garlic. Add reserved pineapple juice and coconut aminos, and simmer.
- Simmer the sauce for around 20 minutes until thickened. If needed, add arrowroot or potato starch to thicken.
- Toss cooked meatballs in the sauce until evenly coated.
- Serve warm over rice, cauli-rice, or veggies.
