- Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan with butter or non-stick spray.
- In a large mixing bowl, mash 2-3 very ripe bananas with ⅓ cup of melted butter until smooth with small lumps.
- Add 1 cup of sugar, 1 beaten egg, and 1 teaspoon of vanilla extract to the banana mixture, stirring until combined.
- Sprinkle 1 teaspoon of baking soda and a pinch of salt over the mixture, then sift in 1 ½ cups of all-purpose flour, folding gently.
- In a small bowl, mix ¼ cup of sugar and 1 tablespoon of ground cinnamon to create a cinnamon-sugar mix.
- Pour half of the banana bread batter into the prepared loaf pan and sprinkle three-quarters of the cinnamon-sugar mixture over it.
- Spoon the remaining batter over the cinnamon-sugar layer and swirl with a knife to create a marbled effect.
- Sprinkle the remaining cinnamon-sugar mixture over the top of the batter.
- Bake the bread in your preheated oven for 50-60 minutes, checking with a toothpick for doneness.
- Cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
