Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of avocado oil in a heavy-bottom pot over medium-low heat.
  2. Add 1 diced onion and 3 sliced scallions to the pot. Sauté for 5 minutes.
  3. Add 3 minced garlic cloves and sauté for another minute.
  4. Stir in 1 cup of chopped cremini mushrooms and cook for 4 minutes.
  5. Incorporate 2 tablespoons of red Thai curry paste, 1 tablespoon of sugar, and 2 tablespoons of soy sauce. Cook for 1 minute.
  6. Add 4 cups of vegetable broth and bring to a gentle simmer.
  7. Stir in 1 can of coconut milk and simmer for 3-4 minutes.
  8. Gently add 12-16 frozen vegan dumplings and cook for 7 minutes.
  9. Remove from heat, adjust seasoning, and serve warm garnished with chili oil, cilantro, and crunchy garlic.
