Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground chicken, rice vinegar, soy sauce, sesame oil, grated garlic, grated ginger, light brown sugar, and chopped green onions. Mix thoroughly and set aside for about 10 minutes.
  2. Lay out the wonton wrappers on a clean surface. Place a teaspoon of filling in the center of each wrapper. Moisten edges with water, fold in half, and press to seal.
  3. In a large pot, bring chicken broth to a gentle simmer. Add minced garlic, dark soy sauce, and sesame oil. Once boiling, add chopped baby bok choy and simmer for 2-3 minutes.
  4. Fill a separate pot with water and bring to a boil. Add wontons and cook for about 2-3 minutes until they float. Remove with a slotted spoon.
  5. Drain cooked wontons and add them to the pot with the broth and bok choy. Simmer for an additional minute before serving in bowls garnished with green onions.
