Method
 

Cooking Steps
  1. Preheat your oven to 375°F (190°C).
  2. Cook pasta in salted boiling water until al dente, approximately 8-10 minutes. Drain and set aside.
  3. In a skillet, heat olive oil and sauté chopped onion for about 5 minutes until translucent. Add minced garlic and cook for 1 more minute.
  4. Mix pumpkin puree, ricotta cheese, nutmeg, salt, and black pepper into the skillet until smooth and well combined.
  5. Gradually stir in broth until desired sauce thickness is reached.
  6. Fold in spinach leaves and cook until wilted, about 2 minutes.
  7. Combine the pasta and sauce in a large bowl, ensuring even coating.
  8. Transfer the mixture to a greased baking dish and spread evenly.
  9. Sprinkle grated mozzarella and Parmesan cheese on top.
  10. Bake for 20-25 minutes until cheese is bubbly and golden brown.
  11. Allow to rest for 5-10 minutes before serving.
