Step-by-Step Instructions
  1. Prepare Marinade: In a food processor, combine fresh cranberries, brown sugar, olive oil, honey, balsamic vinegar, minced garlic, and fresh orange juice and zest. Blend until smooth, about 1-2 minutes.
  2. Marinate Chicken: Place chicken thighs in a ziplock bag and pour glaze over them. Seal and refrigerate for at least 2 hours, preferably overnight.
  3. Bake Chicken: Preheat oven to 375°F (190°C). Grease an 8x8-inch baking pan, arrange chicken, pour marinade over, and bake for 25-30 minutes until internal temperature is 165°F (74°C).
  4. Broil for Crispiness: Once cooked, turn on the broiler. Mix remaining honey and olive oil, brush over chicken skin, and broil for 2-3 minutes until crispy.
  5. Serve: Let chicken rest for 10 minutes, garnish with additional orange zest and cranberries before serving.
