  • 1 cup Shredded Cheddar Cheese Preferably block cheese, shredded for better texture.
For the Flavor
  • 1/2 cup Dried Cranberries Chopped for even distribution; or substitute dried cherries.
  • 1/2 cup Pecans Chopped; can substitute with walnuts.
For the Coating
  • 1/2 cup Chopped Pecans and Cranberries Reserved some for added color.

Method
 

Step-by-Step Instructions
  1. Combine ¼ cup chopped dried cranberries and ¼ cup finely chopped pecans in a small bowl and set aside.
  2. In a stand mixer, beat together 8 ounces of softened cream cheese and 1 cup of shredded cheddar cheese on medium speed for 2–3 minutes until smooth.
  3. Fold in reserved ¼ cup chopped cranberries and ¼ cup chopped pecans.
  4. Shape the cheese mixture into a ball, approximately the size of a large grapefruit.
  5. Roll the cheese ball in the reserved bowl of cranberries and pecans until completely covered.
  6. Chill in the refrigerator for at least an hour before serving.
  7. Serve with an assortment of crackers and fresh vegetable sticks.
