- Combine ¼ cup chopped dried cranberries and ¼ cup finely chopped pecans in a small bowl and set aside.
- In a stand mixer, beat together 8 ounces of softened cream cheese and 1 cup of shredded cheddar cheese on medium speed for 2–3 minutes until smooth.
- Fold in reserved ¼ cup chopped cranberries and ¼ cup chopped pecans.
- Shape the cheese mixture into a ball, approximately the size of a large grapefruit.
- Roll the cheese ball in the reserved bowl of cranberries and pecans until completely covered.
- Chill in the refrigerator for at least an hour before serving.
- Serve with an assortment of crackers and fresh vegetable sticks.
