Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, beat the unsalted butter and granulated sugar until light and fluffy.
  4. Add the egg, red food coloring, vanilla extract, and vinegar to the butter mixture and mix until combined.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. In another bowl, blend the cream cheese, powdered sugar, and vanilla extract until smooth.
  7. Scoop a tablespoon of dough, flatten it, add a teaspoon of cream cheese filling, then cover with another tablespoon of dough and seal.
  8. Place cookies on the baking sheets and bake for 10-12 minutes.
  9. Allow cookies to cool on the sheets for 5 minutes before transferring to wire racks.
