Instructions
  1. In a large saucepan over medium heat, melt the butter or heat olive oil. Add chopped onion and diced poblano pepper, sauté for 5-6 minutes until tender and lightly browned.
  2. Stir in shredded chicken, drained black beans, frozen corn, and chicken broth. Add the seasoning blend and bring to a simmer over medium-high heat, cooking uncovered for about 15 minutes.
  3. Reduce heat to medium-low, add heavy cream and shredded cheese, stirring continuously until melted and creamy. Allow to come to a gentle simmer.
  4. Simmer for an additional 15 minutes, stirring occasionally. Stir in lime juice and season with salt and black pepper.
  5. Ladle the soup into bowls and garnish with chopped cilantro. Serve hot.
