Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and lightly grease a medium-sized baking dish with olive oil.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add 3 minced garlic cloves and sauté for about 1 minute until fragrant.
  3. Add 1 cup of halved cherry tomatoes and 4 cups of fresh baby spinach to the skillet and continue cooking for 3–4 minutes.
  4. Stir in 1 cup of heavy cream, 4 ounces of cream cheese, and ½ cup of grated Parmesan cheese. Add 1 tablespoon of dried Italian seasoning, 1 teaspoon of paprika, and a pinch of crushed red pepper flakes.
  5. Layer 1 pound of fresh, peeled, and deveined shrimp in your greased baking dish, and season with salt and black pepper.
  6. Pour the creamy sauce over the seasoned shrimp in the baking dish, tossing gently.
  7. Sprinkle 1 cup of shredded mozzarella cheese evenly over the top.
  8. Bake uncovered for 12–15 minutes, or until the shrimp turn pink and the cheese is bubbly.
  9. Once baked, remove from the oven and let it cool for a few minutes. Garnish with freshly chopped parsley.
