- Prepare your ingredients: remove stems from tomatoes, peel shallots and garlic, slice shallots, grate ginger, and strip thyme leaves.
- Combine tomatoes, shallots, garlic, salt, pepper, paprika, cayenne, coconut sugar, and olive oil in a skillet.
- Roast the mixture in the oven for about 35 minutes, stirring occasionally.
- Cook fresh potato gnocchi in boiling water for 2-3 minutes until they float, then drain.
- Remove the skillet from the oven, smash the garlic, add gnocchi, coconut cream, lemon juice, and basil, and mix gently.
- Serve the dish hot, garnishing with fresh basil and chili flakes if desired.
