For the Sauce
  • 2 cups Fresh Grape and/or Cherry Tomatoes
  • 2 medium Shallots
  • 4 cloves Garlic whole
  • 1 teaspoon Coarse Sea Salt adjust to taste
  • 1 teaspoon Cracked Black Pepper to taste
  • 1 teaspoon Smoked Paprika
  • 1/4 teaspoon Cayenne Pepper optional
  • 1 inch Fresh Ginger Root grated
  • 1 teaspoon Coconut Sugar
  • 1 tablespoon Fresh Thyme stripped from stems
  • 2 tablespoons Extra Virgin Olive Oil
For the Gnocchi
  • 16 ounces Fresh Potato Gnocchi vegan
  • 1 tablespoon Lemon Juice
For the Garnish
  • 1 cup Fresh Basil Leaves
  • 1/2 cup Coconut Cream
  • 1/4 teaspoon Chili Flakes optional

Method
 

Preparation Steps
  1. Preheat your oven to 375ºF (190ºC).
  2. Prepare your ingredients: remove stems from tomatoes, peel shallots and garlic, slice shallots, grate ginger, and strip thyme leaves.
  3. Combine tomatoes, shallots, garlic, salt, pepper, paprika, cayenne, coconut sugar, and olive oil in a skillet.
  4. Roast the mixture in the oven for about 35 minutes, stirring occasionally.
  5. Cook fresh potato gnocchi in boiling water for 2-3 minutes until they float, then drain.
  6. Remove the skillet from the oven, smash the garlic, add gnocchi, coconut cream, lemon juice, and basil, and mix gently.
  7. Serve the dish hot, garnishing with fresh basil and chili flakes if desired.
