- In a large pot, bring salted water to a boil. Add pasta and cook until al dente, about 8–10 minutes. Drain, reserving 1 cup of pasta water.
- Heat olive oil in a large skillet over medium heat. Sauté diced onion and minced garlic until soft, about 3–4 minutes.
- Add ground beef or turkey to the skillet. Cook for 7–9 minutes until browned. Season with salt, pepper, paprika, and cumin.
- Pour in Rotel and heavy cream, stir to combine. Reduce heat and simmer for 2–3 minutes until sauce thickens.
- Add drained pasta to the skillet, tossing to coat in the sauce. Add reserved pasta water if needed.
- Lower heat and add shredded cheddar cheese, stirring until melted and combined.
- Stir in optional black beans or veggies. Cook until they soften. Garnish with fresh herbs if desired.
