Ingredients

For the Creamy Sauce

Method
 

Cooking Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add seasoned chicken breast tenderloins and sear for 3 minutes on each side until golden brown. Remove from the skillet and set aside.
  2. In the same skillet, add another tablespoon of olive oil, minced garlic, and sun-dried tomatoes. Sauté for about 1 minute until fragrant, then add uncooked orzo. Stir for an additional 2 minutes.
  3. Pour in 3 cups of chicken stock and season with salt. Bring to boil, reduce heat to low, cover, and simmer for 5-8 minutes until orzo is al dente.
  4. Add 2 cups of fresh spinach to the skillet and gently stir until wilted, about 2-3 minutes.
  5. Reduce heat to low and stir in 1 cup of heavy cream, 1 teaspoon of dried basil, and a pinch of red pepper flakes. Cook for another 2-3 minutes.
  6. Return the seared chicken to the skillet and cover to simmer for an additional 2-5 minutes.
