- In a saucepan over medium heat, combine fresh blueberries, sugar, lemon juice, and lemon thyme. Bring to a gentle boil, reduce heat, and simmer for about 20 minutes, stirring occasionally until thickened.
- Take two slices of bread, spread a layer of cooled blueberry compote on one side of each slice. Layer white cheddar and mozzarella on one slice, then top with the other slice, compote-side down.
- In a skillet, melt the butter over medium-low heat. Place assembled sandwiches in the skillet and cook for 2-3 minutes on each side until golden brown and cheese is melted.
- Remove from skillet, let rest for a minute, cut in half diagonally for presentation, and optionally sprinkle with flaky sea salt and lemon thyme before serving.
