  • 1 large Egg Binds the mixture together
  • 1/2 cup Cornstarch For crispy texture
For Frying
  • 2 cups Vegetable Oil Ensure it reaches 350°F for frying

Method
 

Step-by-Step Instructions
  1. Soak the shrimp in warm, lightly salted water for about 5 minutes.
  2. Preheat your vegetable oil in a deep pot or fryer to 350°F.
  3. Rinse the soaked shrimp in cold water and pat dry with paper towels.
  4. Rinse canned sliced water chestnuts under warm water and drain well.
  5. Finely mince the shrimp and drained water chestnuts.
  6. In a mixing bowl, combine minced shrimp, water chestnuts, green onion, ginger, soy sauce, rice wine, sugar, sesame oil, black pepper, egg, and cornstarch. Mix thoroughly.
  7. Form compact balls from the mixture, each about 1 inch in diameter.
  8. Fry the shrimp balls in hot oil for 3 to 4 minutes until crispy and golden brown.
  9. Remove the shrimp balls from the oil and drain on paper towels. Serve warm.
