  • 2 tablespoons Olive oil For brushing the phyllo layers.
For the Filling
  • 8 ounces Feta cheese Opt for Greek or Bulgarian feta.
  • 1 teaspoon Red pepper flakes Adjust to taste.
  • 1 teaspoon Thyme Can substitute with rosemary.
For the Drizzle
  • 4 tablespoons Hot honey Can substitute with maple syrup mixed with chili.

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Unroll the phyllo dough, layer several sheets, and brush with olive oil. Cut into squares for muffin tin.
  3. Press each phyllo square into the muffin tin to form cups, brush lightly with olive oil.
  4. Crumble feta cheese into each cup, filling just below the rim.
  5. Bake for about 10 minutes until phyllo is golden brown and crispy.
  6. Drizzle hot honey over melted feta in each cup after baking.
