Method
 

Step-by-step Instructions
  1. Grate the russet potatoes and drain excess moisture. Combine with cornstarch, salt, black pepper, and chopped green onions.
  2. Fold in the grated mozzarella cheese into the potato mixture.
  3. Heat a non-stick skillet over medium heat and add oil until shimmering.
  4. Scoop a quarter cup of the mixture into the skillet and flatten into pancakes. Cook for 3-4 minutes until golden, then flip.
  5. Sprinkle additional mozzarella cheese on top of the pancakes and cook for another 3-4 minutes until golden.
  6. Transfer to a serving plate and garnish with remaining green onions before serving warm.
