  • 2 large Eggs Beaten

  • 0.5 cup Parmesan Cheese Grated, can swap with feta or cheddar
  • 2 stalks Green Onion Chopped
  • 2 cloves Garlic Minced
  • 1 teaspoon Salt Adjust based on cheese used
  • 0.5 teaspoon Black Pepper To taste
  • 1 teaspoon Baking Powder Optional
  • 0.25 cup Oil for Frying Neutral oil like canola or vegetable
For Serving
  • 0.5 cup Sour Cream or Yogurt Dipping option
  • 0.5 cup Tzatziki Sauce Optional for serving

Step-by-Step Instructions
  1. Begin by grating the zucchini into a large bowl. Sprinkle generously with salt and let it drain in a colander for about 10 minutes.
  2. In the same bowl, combine the drained zucchini with beaten eggs, all-purpose flour, and grated Parmesan cheese. Add chopped green onions, minced garlic, salt, and black pepper, then mix until a thick batter forms.
  3. Heat a large skillet over medium heat, adding enough oil to coat the bottom generously. Allow the oil to heat for 3-4 minutes.
  4. Scoop about 2 tablespoons of batter into the skillet, flattening slightly. Fry for 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes.
  5. Transfer cooked fritters to a paper towel-lined plate and repeat the frying process for the remaining batter.
  6. Serve the fritters warm, optionally with sour cream or yogurt and tzatziki sauce.
