Step-by-Step Instructions
  1. In a large bowl, combine the chicken breasts with olive oil, Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear the seasoned chicken for 2-3 minutes on each side until golden brown.
  3. Transfer the chicken to the slow cooker and layer sliced bell pepper, chopped onion, and minced garlic over it.
  4. Pour in the diced tomatoes and chicken broth, ensuring everything is covered.
  5. Cover and slow cook on low for 4-5 hours or high for 2-3 hours.
  6. Once tender, shred the chicken in the slow cooker and stir to combine.
  7. Stir in heavy cream and Parmesan cheese, heating through for about 10 minutes.
  8. Cook the penne pasta according to package directions, then drain and add to the slow cooker.
