Step-by-Step Instructions
  1. Season the chicken breasts with salt, black pepper, and Cajun seasoning before placing them in the crockpot.
  2. Melt butter in a skillet over medium heat, sauté the chopped onion for 3-4 minutes until translucent, then add minced garlic for another minute.
  3. Sprinkle smoked paprika and dried oregano over the chicken, then pour chicken broth ensuring the chicken is mostly submerged.
  4. Cover the crockpot and cook on low for 6 hours or high for 3-4 hours until the chicken is tender.
  5. Use two forks to shred the chicken in the pot, then stir in heavy cream and cook on low for an additional 15-20 minutes.
