- Gather all the ingredients. Chop green onions and mince garlic, then set aside.
- In a large mixing bowl, combine sugar, sesame seeds, minced garlic, and chopped green onions. Add soy sauce, rice vinegar, chili oil, and sesame oil; whisk for about 30 seconds.
- Trim cucumber ends and spiral slice them diagonally to create spirals.
- Place spiraled cucumbers in a bowl, sprinkle with salt, massage for 1-2 minutes, and let sit for 8-10 minutes.
- Rinse cucumbers under cold water and pat dry to remove excess salt.
