  • 1/4 cup Sunflower Seeds Nut-free alternative; can substitute with pumpkin seeds.
  • 2 tbsp Chia Seeds Can be replaced with flax seeds.
  • 1/4 cup Maple Syrup Can also use agave nectar or date syrup.
Frosting
  • 1 large Avocado Adds healthy fats; can replace with young coconut or cashews if preferred.
  • 1/2 cup Coconut Cream Ensure it’s chilled for better whipping.

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. Bake whole sweet potatoes for about 45 minutes until tender.
  3. Blend cooled sweet potato, pitted dates, cocoa powder, coconut flour, and chia seeds in a food processor until smooth.
  4. Add maple syrup and sunflower seeds to the mixture and pulse until combined.
  5. Line an 8x8 inch baking dish with parchment paper, pour in the brownie mixture, and smooth the top.
  6. Bake for 25 to 30 minutes, checking for doneness with a toothpick.
  7. Blend avocado, cocoa powder, and maple syrup for the frosting until smooth.
  8. Cool the brownies completely before spreading the avocado frosting on top.
