Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine softened unsalted butter and granulated sugar. Beat until light and fluffy, about 3-5 minutes.
  3. Add vanilla extract and the large egg. Beat until fully blended.
  4. In another bowl, whisk together all-purpose flour, baking soda, salt, ground cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Form the dough into 1-inch balls and place on the prepared baking sheet, spacing them at least 2 inches apart.
  7. Bake for 10-12 minutes until the edges are golden brown and centers appear set but slightly soft.
  8. Cool the cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. In a small saucepan, heat heavy cream over medium heat until just simmering. Whisk in brown sugar and cornstarch until dissolved.
  10. Spoon the topping over each cookie and broil for 1-2 minutes until caramelized.
  11. Let cool slightly at room temperature before serving.
