Preparation
  1. Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan or line it with parchment paper.
  2. In a medium bowl, combine melted butter, sugar, cocoa powder, red food coloring, vanilla extract, and vinegar. Whisk until smooth.
  3. Incorporate eggs one at a time, whisking after each addition. Gradually stir in flour and salt until no dry ingredients remain.
  4. Reserve about 1/4 cup of the brownie batter in another bowl. Pour the remaining batter into the prepared baking pan.
  5. In another bowl, beat cream cheese, sugar, egg yolk, and a splash of vanilla extract until smooth.
  6. Spread the cream cheese mixture over the brownie batter evenly.
  7. Dollop the reserved brownie batter over the cheesecake layer and swirl gently.
  8. Bake in the preheated oven for 30-35 minutes. Look for the edges to be set while the center remains slightly jiggly.
  9. Once baked, remove the pan from the oven and let it cool completely. Slice into squares and serve.
