Preparation
- Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan or line it with parchment paper.
- In a medium bowl, combine melted butter, sugar, cocoa powder, red food coloring, vanilla extract, and vinegar. Whisk until smooth.
- Incorporate eggs one at a time, whisking after each addition. Gradually stir in flour and salt until no dry ingredients remain.
- Reserve about 1/4 cup of the brownie batter in another bowl. Pour the remaining batter into the prepared baking pan.
- In another bowl, beat cream cheese, sugar, egg yolk, and a splash of vanilla extract until smooth.
- Spread the cream cheese mixture over the brownie batter evenly.
- Dollop the reserved brownie batter over the cheesecake layer and swirl gently.
- Bake in the preheated oven for 30-35 minutes. Look for the edges to be set while the center remains slightly jiggly.
- Once baked, remove the pan from the oven and let it cool completely. Slice into squares and serve.
