Step-by-Step Instructions for Red Velvet Cheesecake Brownies
- Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
- In a medium mixing bowl, whisk together the melted butter and sugar until smooth. Add eggs, vanilla extract, and red food coloring, mixing well.
- Sift in cocoa powder, flour, and salt, folding until just combined to create a rich brownie batter.
- In another bowl, beat the cream cheese and additional sugar until creamy. Mix in one egg and a splash of vanilla extract.
- Pour about ¾ of the brownie batter into the pan, dollop the cheesecake mixture on top, then add the remaining brownie batter and swirl together.
- Bake for 30-35 minutes, and check doneness with a toothpick. The brownies should pull away from the edges slightly.
- Let cool in the pan for 10 minutes, then refrigerate for at least an hour before slicing into squares.
- Serve sliced brownies plain, or top with whipped cream or chocolate sauce.

Notes
Avoid overmixing the brownie batter and chill the brownies before slicing for clean cuts. Experiment with flavors by adding white chocolate chips or nuts.
