Ingredients
  

For the Pears
  • 4 medium Pears ripe but firm
  • 2 tablespoons Butter dotted on pears
For the Filling
  • 4 ounces Goat Cheese softened
  • 2 tablespoons Honey for filling
For the Topping
  • 1 cup Fresh Cranberries
  • 1 tablespoon Cinnamon optional
  • 4 leaves Mint Leaves optional garnish

Method
 

Baking Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Halve and core the pears, trimming bottoms for stability and placing cut-side up in a baking dish.
  3. Dot the cut sides of each pear with butter.
  4. Roast the pears in the oven for about 20 minutes, until golden and fork-tender.
  5. While pears roast, combine cranberries and honey in a saucepan over medium heat, cooking until cranberries burst and form a loose compote.
  6. Fill each pear cavity with goat cheese and return to the oven for an additional 5 minutes.
  7. Top each pear with the warm cranberry compote.
  8. Drizzle with honey and optionally sprinkle cinnamon or top with mint leaves before serving.
