  1. In a medium saucepan, mix 2 cups of frozen cherries, 1/3 cup of granulated sugar, 2 tablespoons of cornstarch, and 1/4 cup of cold water. Cook over medium heat, stirring constantly, until the mixture thickens and bubbles, about 8-10 minutes. Once thickened, remove from heat and allow the cherry filling to cool completely before using.
  2. In a small bowl, combine 1 teaspoon of active dry yeast with 1/4 cup of warm water (around 110°F) and a pinch of sugar. Let it sit for about 5-10 minutes until frothy.
  3. In a large mixing bowl, combine the activated yeast mixture with 3/4 cup of whole milk, 1/3 cup of sugar, 2 large eggs, 4 1/2 cups of bread flour, and 1/2 teaspoon of salt. Mix until the dough starts to come together.
  4. Transfer the dough to a lightly floured surface, and knead for about 5-7 minutes, until it's smooth and elastic.
