  • 1 pound Cod Fillet skinless

  • 2 tablespoons Lemon Juice fresh
  • 1 teaspoon Paprika smoked paprika for extra flavor
  • 1/2 teaspoon Cayenne Pepper adjust to taste
  • 1 teaspoon Ground Cumin
  • 1/2 teaspoon Salt to taste
For the Creamy Sauce
  • 1/2 cup Greek Yogurt regular yogurt can be used
  • 1/4 cup Mayonnaise use vegan mayo for an alternative
For the Tacos
  • 2 cups Purple Cabbage shredded
  • 1 cup Carrots grated
  • 1 cup Frozen Corn thawed
  • 1-2 pieces Jalapenos chopped, to taste
  • 1/4 cup Cilantro chopped
  • 8 pieces Corn Tortillas or flour tortillas

Method
 

Step-by-Step Instructions
  1. In a mixing bowl, whisk together oil, lemon juice, paprika, cayenne, cumin, and salt. Add cod fillet and marinate for at least 30 minutes in the refrigerator.
  2. In a separate bowl, mix Greek yogurt, mayonnaise, lemon juice, paprika, and salt until smooth. Set aside.
  3. In a large bowl, combine purple cabbage, carrots, corn, jalapenos, and cilantro. Add lemon juice and salt, stir until coated.
  4. Heat a skillet and cook the marinated cod for 3-5 minutes on each side until flaky. Break into chunks.
  5. Char tortillas until warm. Assemble tacos with cod, slaw, and creamy sauce, garnishing with cilantro and jalapenos.
